One of our sweetest little corners of France is preparing to say goodbye. And the community came out today to say Bon Voyage.

Le Patissier is going to close its doors after serving its final pastry on Saturday, September 26. Owners Didier and Trinidad “Trini” Tholognat are retiring after two decades of croissants, crêpes, éclairs, and other French delicacies.
The bakery recently announced its closure and thanked the community for its support over the years.
“Our goal was to create a space where Chef could showcase his skills and provide the region with a piece of France in Oregon,” the announcement said. “With Trini at his side decorating, cooking, and managing, they have enjoyed the last two decades providing delicious pastries for all who have passed through these doors.”
Pictures can replace words sometimes, and the lines outside today tell the real story.
The lines remained long all morning, with customers hoping to enjoy one last final visit. It was not just the regulars there, or as we like to say, “Le Patissier superfans.” We talked to three different people in line, who said it was actually their first time there. They heard it was closing and felt like this was their final chance to try it.
Items were selling out as quickly as the staff could fill the cases.
Didier is originally from Lyon, France, a city known for taking its food very seriously. His pastries reflect years of training and practice. Alongside him, Trini has helped decorate, cook, and manage the neighborhood bakery.
“This vibrant community is what has kept us successful, and we are very grateful for your loyalty and support,” the couple wrote. “Thank you for spending these years with us.”
The bakery is scheduled to remain open through Saturday, September 26, although anyone hoping for one last croissant may want to arrive early.
Merci beaucoup seems more fitting here to us, rather than a simple goodbye.
